Description

Fruit breads aren't just for breakfast or snacks. Try this sandwich recipe.

Ingredients

1jarprepared basil pesto
1jarroasted red peppers, cut into strips
2Tgarlic oil
1⁄2cextra virgin olive oil
1lbboneless, skinless chicken breast
1lbprovolone cheese
8sliOregon Trail Apple Danish Bread, with crust trimmed off

Notes

Cut in half crosswise and enjoy with a small salad or chips.

Instructions

  1. In a medium skillet, sauté chicken breast in 2 Tbls garlic* oil, until chicken is done. Slice chicken thinly at an angle against the grain.
  2. Generously spread pesto on each slice of bread.
  3. Place chicken, red peppers and provolone on bread, brush with olive oil and grill on a doubled sided indoor grill until bread is toasted and cheese is melted.
