Fruit breads aren't just for breakfast or snacks. Try this sandwich recipe.

prepared basil pesto

roasted red peppers, cut into strips

garlic oil

extra virgin olive oil

boneless, skinless chicken breast

provolone cheese

Notes
Cut in half crosswise and enjoy with a small salad or chips.
Instructions
In a medium skillet, sauté chicken breast in 2 Tbls garlic* oil, until chicken is done. Slice chicken thinly at an angle against the grain.
Generously spread pesto on each slice of bread.
Place chicken, red peppers and provolone on bread, brush with olive oil and grill on a doubled sided indoor grill until bread is toasted and cheese is melted.
